If Spanish chefs don't care about olive oil's health benefits, who will?

A study published this month on the journal Nutrients based on a survey of 400 Spanish chefs, found that just 2 percent consider health to be a relevant factor when making decisions about which olive oil to buy.

"These results lead us to conclude that the consumer demand for healthy foods (in this case, olive oils) is not being met by the restaurant sector," the researchers noted. "This raises the question as to whether chefs actually make good opinion leaders."
